Ralph Santos is the roasting manager at Cypher Roastery in Dubai, United Arab Emirates. With one of the highest standards of living in the world, Dubai is known for the world’s tallest skyscraper, artificial islands visible from space, and a vanishingly low crime rate. When I visited Dubai in 2005, the city was in the early stages of the investment which has propelled it to the world stage.
Ralph takes us beneath the surface of Dubai, to quiet moments in the Old Town and adventure out of the city.
Filter: What do you like to do for fun around Dubai?
Dubai boasts a diverse array of activities for both entertainment and leisure. During the summer months, my preference leans towards indoor activities. This involves spending time with barista friends at various cafes and unwinding in popular locations like Dubai Mall and Mall of the Emirates or exploring different specialty coffee shops.
As the winter season arrives, my interests shift towards outdoor activities. I find solace in relaxing on the picturesque beaches, such as Jumeirah Beach or Kite Beach or camping during the holidays. Additionally, I enjoy socializing with friends in public parks and engaging in a friendly game of basketball with our barista friends.
These contrasting experiences allow me to fully appreciate the dynamic offerings of Dubai throughout the year. From the bustling indoor scenes to the serene outdoor landscapes, the city provides a rich option for individuals seeking enjoyment and recreation and relaxation.
For a taste of traditional entertainment and a delightful dinner, a desert safari is a must. Additionally, a journey to Old Dubai, specifically the Al Fahidi Historic District, would provide a captivating exploration of the city's rich history and cultural heritage.
Filter: Do you have a favorite spot in Al Fahidi?
The Coffee Museum: it offers a journey through the history of coffee, including traditional brewing methods and cultural significance.
Filter: What do you like to do to escape the city? Are there any tips people should know before trying these?
Every weekend, whenever possible we head to Fujairqah for mountain biking or fishing. Known for its stunning beaches and the Hajar Mountains, Fujairah is a more laid-back emirate with a wealth of historical sites. You can explore rugged mountains, hiking trails, or simply unwind on the serene beaches.
Filter: What historical sites in Fujairah do you enjoy visiting?
Al-Bidyah Mosque: known as the oldest mosque in the UAE, the mosque dates back to the 15th century. It has a unique architecture and historical significance that make it a notable site for me.
Filter: The Hajar Mountains run from northern Oman up through the eastern United Arab Emirates. What do you do there?
Al Taween Enduro Trail, Fujairah Adventure Park, and Hatta Adventures.
Filter: What touristy things in Dubai are worth the hype?
Dubai is home to several renowned tourist attractions, each offering a unique and iconic experience that is truly worth exploring. One such marvel is the Burj Khalifa, where a visit to the observation deck on the 148th floor provides a breathtaking panoramic view of the city. Adjacent to the Burj Khalifa is the Dubai Fountain show, boasting the title of the world's largest choreographed fountain system. This mesmerizing water dance, synchronized to music and illuminated by lights, puts on a spectacular show, particularly in the evening.
But the wonders of Dubai don't end there. Other must-visit attractions include the Dubai Frame, Ski Dubai, the iconic Palm Jumeirah, the sprawling Dubai Mall, the vibrant Dubai Marina, the diverse Global Village, and many more. Each of these destinations contributes to Dubai, promising a wealth of memorable experiences for every visitor.
Filter: Do you have any favorite restaurants in these places?
Joe and the Juice, if I’m looking for fast-phase kind of food—they served good quality coffee, juice and sandwiches. Nice ambiance and really good playlist of music.
Surf House: Located close to popular surfing locations which are Jumeirah Beach and Kite Beach, offering easy access to waves for surfers, and a laid back atmosphere reflecting the chilled-out lifestyle associated with surfing. What makes Surf House special to me is the ability to create welcoming space for individuals and having some good coffee and food.
Filter: Where’s your go-to green space in the city?
Mushrif Park, situated away from the bustling city center, offers a tranquil environment with natural landscapes, cycling tracks, and barbecue areas. It stands as an excellent choice for a family day out. Within the park, they can find a specialty café, Café Peloton, that provides not only high-quality coffee but also a pleasant ambiance, making it an ideal spot for those who appreciate outdoor activities and good coffee alike.
Filter: What’s one other coffee shop around there that you really admire, and what about them stands out to you?
The Grey Café, situated on Al Wasl Road in Dubai, is one of the sought after coffee shops for its cozy and inviting atmosphere, making it a favoured destination for both locals and expats. The café is renowned for its selection of specialty coffees, delightful pastries, and a diverse menu featuring breakfast and lunch options. The modern and minimalist interior design further enhances the overall appeal of this popular spot.
Filter: What makes Dubai feel most like home to you?
Dubai is renowned for being home to a multicultural and diverse population. The city attracts people from various backgrounds and nationalities, fostering a rich and vibrant culture. This diversity contributes to a sense of belonging, especially when individuals discover communities that share similar values and interests. A notable example is the barista community here in the UAE, where a strong sense of camaraderie prevails, and the familiar sentiment of 'everybody knows everybody' prevails.
Safety and cleanliness are notable features of Dubai, often commended for its low crime rates and well-maintained public spaces. The city places a strong emphasis on security, fostering a sense of comfort and well-being for both residents and visitors. With a commitment to providing a high standard of living, Dubai offers world-class healthcare, education, and recreational facilities. This commitment to quality of life stands as a significant factor attracting people from around the world to the vibrant city.
Filter: How long have you lived in Dubai? How do you like it?
I am originally from the Philippines and moved to Dubai in 2019. Having lived here for four years now, the experience has been rewarding. While Dubai offers a dynamic lifestyle and abundant opportunities, it's crucial to understand and adapt to the cultural and legal differences of the city. Appreciating and navigating these aspects contributes significantly to the overall positive experience of living in this city.

I work as a Quality Control professional at Cypher Roastery, where my role involves ensuring that coffee beans and products adhere to stringent quality standards. This includes guaranteeing that the final products achieve the desired taste and aroma as per specifications. I am also responsible for understanding clients' requirements, offering guidance on proper coffee calibration, and providing valuable tips and advice to help unlock the best potential of the coffee.
